Here is how to make his tender chicken dinner. All the ingredients you’ll need for this tasty meal:
- 2 lbs of chicken breast
- 1 pound of red potatoes
- .5 lbs of carrots
- 1/4 cups of olive oil
- 1/3 cup of freshly squeezed lemon juice
- 1 tsp of dried oregano
- 1 tsp of onion powder
- 2 tsp of crushed garlic
- 1 tsp of salt
- Freshly cracked black pepper
- 4 hours if slow-cooker is set on HIGH
- 8 hours if slow-cooker is set on LOW
First comes the seasoned marinated mix.
For the seasoned marinated mix, you’re going to want to start with the quarter of olive oil in a small jug or measurement cup.
After this, you’re going to want to add the third of freshly squeezed lemon juice into the olive oil. One Pot Chef says it’s best freshly squeezed than rather out of a bottle!
Then you add the teaspoon of oregano and onion powder, two teaspoons of crushed garlic, a teaspoon of salt, and a little bit of freshly cracked black pepper.
Stir this, and you’ve got your lovely marinated mix!
Time to put it all together in the slow cooker.
To start, put the two pounds of chicken in the slow cooker. Make sure that it is boneless, skinless, and any excess fat is trimmed off to make sure it has that perfect, tender feel to it!
Next comes the pound of quartered red potatoes. After the potatoes, you can add the half-pound of dutch or baby carrots, make sure you have trimmed and peeled them!
Now for the final touches of this appetizing slow-cooked chicken dinner.
Now all you need to do is pour the seasoned marinated mix over everything in the slow cooker, starting with the chicken, moving to the potatoes, and then the carrots. Just make sure it’s all over everything so it all of the ingredients get that extra dose of flavor!
For the last step, just turn on the slow cooker! If you want to set it on high, it will be 4 hours, and if you’re going to take a little extra time with it, you can set it on low, and it will be ready in 8 hours. One Pot Chef says to remember not to take the lid off during its cooking because you want as much as that steam in there as possible to make sure it cooks appropriately!
When this meal is done, it will be ready to serve straight out of the pot, and it serves up to four people.
