You could call the sweet potato a perfect vegetable. After all, it’s highly nutritious, super yummy, and even kids like it. This veggie is also quite versatile.

When it comes to recipes for sweet potatoes, you’ll have no problem finding thousands upon thousands of them. But once in a while, a recipe comes along that blows all others out of the water. That would certainly apply to this yummy option.

Directions

For this, you’ll need two sweet potatoes. Since these are made in Hasselback form, you can easily share them with others. Or you can prepare as many potatoes as you want.

Next, place two chopsticks underneath the veggies to serve as a guide while you cut them. These will prevent you from slicing completely through the sweet potatoes. With a sharp knife, make slices every half-inch, again, without going all the way through.

Now, set the chopsticks to the side. If you pull gently on the sweet potatoes, you’ll see that they look similar to an accordion. By doing these Hasselback, the other ingredients will seep into every cut you made so the center explodes with flavor.

Next, place the two sweet potatoes in an oven-proof baking dish. Drizzle a little bit of olive oil on top and then use a pastry brush to get the oil into every cut. Follow that by sprinkling on a small amount of salt. Pop the dish into a 425-degree preheated oven and bake for 30 to 40 minutes.

While the sweet potatoes are baking, you’re going to make a mixture of ingredients that’ll go on top. In a bowl, add melted butter, cinnamon, chopped pecans, maple syrup, vanilla, and a pinch of salt.

When the sweet potatoes are done baking, pull them out of the oven and top them with the mixture you created in a bowl. Be sure you get some of it in between every slice. Pop the sweet potatoes back in the oven for 8 to 10 minutes.

When the timer goes off, the sweet potatoes are ready to serve. Keep in mind they’re going to be hot so you might want to let them sit for a few minutes before biting into them. This recipe is amazing.

Instructions summary

Start by setting two sweet potatoes on top of two chopsticks. These will keep you from accidentally cutting all the way through when making the slices. Then, cut slices about one-half inch the entire length of both sweet potatoes, followed by removing the chopsticks.

Next, place the sweet potatoes in a baking dish, drizzle on olive oil and then brush it into the slices, and sprinkle a little salt on top. Bake the sweet potatoes for 30 to 40 minutes in a 425-degree preheated oven. While baking, you’ll make the sweet topping.

For this, mix melted butter, chopped pecans, a dash of salt, cinnamon, maple syrup, and vanilla in a bowl. After the sweet potatoes finish baking, spoon the mixture over the top (be sure to get inside every slice), and then bake for an additional 8 to 10 minutes.
