If you have to satisfy the different wants and needs of your family and friends when it comes to something sweet and delicious then these cookies will be just what you need to whip up as they take no time at all. You may want to make a few extra batches as no doubt they will go quickly, and if not then you will have some extra gifts to give away.

Prep time: 30 minutes

Recipe makes 36 cookies

Bake time: 1 to 2 minutes per batch

The best way to make this an easy task is to first gather all of your ingredients.

  • 1 cup butter

  • 4 ounces unsweetened chocolate, chopped

  • 1 ½ cups granulated sugar

  • 4 eggs

  • 2 teaspoons vanilla

  • ½ teaspoon salt

  • ½ teaspoon instant coffee crystals

  • ½ cup unsweetened cocoa powder

  • 1 ½ cups all-purpose flour

  • 2 tablespoons butter

  • ¼ cup powdered sugar

  • 2 tablespoons unsweetened cocoa powder

  • 1 – 2 tablespoon milk

  • ¼ teaspoon peppermint extract

  • Crushed peppermint candies

Directions

Step 1

You are going to want to use a medium sized pan for this and making sure that you use low heat. Add the butter to the pan and stir in the unsweetened chocolate until it is totally melted and the mixture looks smooth.

Step 2

Next, you will need to put the granulated sugar, eggs, vanilla, salt, and coffee crystals into a large bowl that you will be able to use your electric mixer with. These ingredients have to be beaten for about four minutes. You want the mixture to look thick and have a pale color to it. Once you have achieved this you can now add the chocolate mixture and beat this into the mixture. Next, add the 1/2 cup of cocoa powder along with a good portion of the flour. Beat thoroughly with the mixture, and then add the rest of the flour and blend it well.

Step 3

Now you are going to get the chance to use your electric waffle iron. Make sure that you have read all of the instructions that pertain to this small kitchen appliance. You are going to need to grease the grids lightly so the mixture will not stick to it. Once you have done this you need to spoon two tbsps. of your batter into the center portion of the waffle. This should be enough to make cookies about 1 1/2 inches to 2 inches in size. Make sure that you close the waffle iron properly and allow the cookies to cook for about 1 to 1 1/2 minutes. They should be set. Once they have cooked you can use a fork to loosen them off of the grid. Place them on a wire rack for cooling.

Step 4

The next step is to take a small pan and add 2 tbsp. of butter to it so it can be melted over low heat. Once it has melted you need to take it away from the heat and carefully stir in the powdered sugar along with 2 tablespoons of cocoa powder. Continue to stir unti it is completely smooth. Then you can stir in the extract of peppermint and the milk. This will create a thin glaze.

Step 5

Now comes the fun part. Get a baking sheet and cover this with parchment paper. You need to dip each cookie into the glaze so only one side gets covered. Be patient while you let the excess glaze drip back into the bowl. Place each cookie on the lined baking sheet. Once you have dipped all the cookies then sprinkle each one with some crushed peppermint candies. The cookies will need to sit for a while so the glaze can set.

How To Store

If you are making extra of these cookies you will want to store them so they stay fresh. Make sure that you do not glaze them at this stage. You will need an airtight container. Big enough so you can layer the cookies by using a sheet of wax paper between each layer. Close the lid tightly and they can be stored at room temperature for about three days. Or if you wish to freeze them they will last for three months. Once they have thawed you can glaze them.
